RECIPE: Strawberry Mojito (Mocktail)

Think hot and humid afternoon that makes your throat dry. Then think of what could be a great thing to quench that thirst. For me, it has to be something cold, with balanced flavor of sweetness and sourness, with a hint of mint and a beautiful color. How about a glass of Strawberry Mojito then? Or in this case: 'Mock'jito, because I prefer it sans alcohol. Mock-jito, Mocktail Mojito, got it? No? OK nevermind. Anyway here's a recipe for when you need a glass (or a pitcher) of super refreshing drink in a hot humid afternoon BUT you're a little too lazy today to dress up, go out and spend your money on a fancy drink at a fancy cafe (like me). I promise this is going to be super easy and tasty (and also pretty because it's pink! Haha), I mean I actually made this in my home's messy cramped kitchen without any fancy schmancy equipment, and you'll feel like you've been fooled all this time by the look of the drink you often order.





INGREDIENTS (Serves 1-2):
1. 4-5 strawberries, stems off and quartered
2. Juice of a half lemon (the original Mojito recipe calls for lime, but I just like lemon better)
3. 2-3 tsp granulated sugar (mine was 2 because I like it not too sweet)
4. A handful of mint leaves, stems off
5. 250 ml of club soda/soda water
6. Ice cubes (crushed or leave it that way, whichever works just well)

DIRECTIONS:
1. Combine strawberries, lemon juice, mint leaves and sugar in a glass (I use a mason jar, because I'm a friggin' hipster...)
2. Using a masher (or a fork if you don't have such kind of fancy equipment like me), mash all those ingredients until they're crushed and clashed and mixed altogether. Don't worry if you still see lumps of those strawberries and mints. As long as it changes color after you mashed it well, you should do just fine.
3. Top with ice cubes or crushed ice until half full
4. Pour your soda and stir until well mixed
5. Garnish with leftover strawberry and remaining mint leaves if you still have them or just go ahead and enjoy your drink (with a fancy straw if you have one, trust me it makes the drink taste better :P)


Hipster mason jar and a fancy straw makes it 100x better. Hahaha..

This drink is totally safe for everyone since it doesn't contain alcohol at all, but by all means if you want to add some alcohol into it (preferably rum), then go ahead ;)
